I found this
Kishibori Shoyu at my favorite store, Sur La Table. This is real soy sauce!! Fermented for 2 years in 100 year old cedar casks. Wow! Rich and complex, yet not salty. Everything is in Chinese so I can't tell you anything more about it..... other than to get some.......
